The Devour Madrid Tapas Tour looks fine, but I'm wary. My last food tour (Rome with Eating Europe) suffered from an unenthusiastic/overworked guide. Have you found a better food tour guide/company/experience in Madrid? Perhaps a map of Tapas Bars for a self-guided tour; although I would appreciate a guide's knowledge of food history.
