Lucky you, Pauline! We were planning to spend 3 weeks in Sablet in April/May 2020 when the pandemic hit and we had to cancel. It would have been our fifth time there, thanks originally to Jeri's strong, even passionate, recommendation.
Below are some notes for our 2018 visit, so take them with a grain of salt since things have probably changed a lot. Lots of restaurant recommendations, and I've deleted all the notes about wine and vineyards!

Drive through Dentelles from Beaumes-de-Venise to Malaucene, through Lafare and Suzette (D90)
Drive through Toulourenc valley to Brantes (D40), most beautiful village in Provence - small cafe/restaurant perched right at the edge of a cliff - have a drink on terrace there – eat in Plaisians at Auberge de la Clue, place de l'église – Bib – cl. Mon - 04 75 28 01 17
Take D538 to Le Poet Laval (D540 – lunch at Les Hospitaliers on Wed.-Fri.), to Bourdeaux and then up to Crest - great, with old fortifications along the route – Grignan on way back (Le Poeme for lunch)

Gigondas – Du Verre a L'Assiette, across from L'Oustalet & the caveau - salads, pizzas, poulet roti—good basic food
Cairanne - vineyard hikes offered through the tourist office

Vaison la Romaine – don't miss the Tues. market: parking lot by church just over bridge coming into town--you come to medieval section, then turn left over bridge to modern half - get pain aux raisins at stand directly en face, then coffee at cafe just off ave. de Gaulle in cours Taulignan –Intermarche to stock up - Lou Canesteou cheese shop (Vacherin Haut-Doubs or Mont d’Or, lait cru) - Peyrerol for croissants, etc.
