I'm late to this thread ! We too sometimes make last minute changes or choices. In fact, we found this recommendation "last minute" while on the road in October! We've stayed at Agriturismo Podere Santa Maria in Montichello and would happily go there again. The owners Virno and Maura were friendly and wonderful hosts. They served dinner most nights we were there, if you chose. The food and drinks were fresh, delicious and eaten with the family and other guests. The farm produces olive oil, saffron and grains. My husband helped with the olive harvest when we went and just loved getting involved. He ran an agricultural school so, not a novice to farming. We found it to be a good location for day trips around the Val di Orcia region. https://www.santamariapienza.it/
As for your Liguria stays, look at Levanto, just north of the Cinque Terre. We've also stayed in Portovenere and liked that as well off season. Other spots to explore not far from Lerici are Pietrasanta, where Michelangelo stayed, and Sarzana. My family is from the Lunigiana, not far from Lerici, and we love that area as well.
